What Unconditional Love Looks Like

I was hopping around the blog world during a quick morning break, visited my friend Rebekah's blog, and was introduced to an amazing story. She warned her readers that it would touch their heart, and boy was she right.

Take the time to watch this video. I never want a day to go by that I don't let my family, friends, or Adam know how much I love them. It seems so simple, but I am guilty of taking each day for granted.

Make sure you grab a tissue, but don't worry... these tears will be happy, encouraged, and inspired. Promise.





What a powerful reminder of the role unconditional love should play in our lives and relationships. There are bad days mixed right along with good days, but the difference is actively choosing to love and never give up.

And on that note... an amazing cover of Jason Mraz's "I Won't Give Up" that I fell in love with when I found it on YouTube last night.... *sigh*




Her voice gives me chills!

May you be love today in any way you think to express it. Pick up your cell phone and call a friend, send a txt, or plan a lunch date. Maybe even hide a sweet little note somewhere to be found later. Spread that love around!

Hasta la Pasta

Adios, my friends... boyfriend and I are skipping town!
Yes, you heard that right, my weekend begins at noon today and we're headed to Wichita for our friends' wedding. I know you must think that wedding hopping is all we do, and to that I would say... you're absolutely right! ;)

Another couple from our Bible studies are getting hitched this weekend and this one just happens to be in my hometown! I'm looking forward to heading home, spending time with my family and our friends, and trying to fit in some relaxing "us" time too. Should be quite the adventure!



As soon as we get done with work, Adam's planning to stop by to whisk me and Beast away. We have to speed over to the tux boutique when we get in town so he can pick up his wedding garb, and then we're off to see little sis score a trillion goals for her high school soccer team! Post-game, I'm secretly hoping for some movie and chill time.

Tomorrow, Adam is golfing with Dad and my uncle Dean while I enjoy a lovely bridal brunch. Rehearsal dinner is at a local brewery on Friday night, and I can't even begin to tell you how jazzed Mr. Beer Connoisseur (aka: Adam) is! :)

Saturday will be fun-filled with wedding party photos, the ceremony, and dancing all night with our newlywed buds and out of town friends! By the time Sunday rolls around, I bet we will barely be able to move!

Skinny Greek Yogurt Chicken

For weeks now I have seen this recipe for "Melt in your mouth chicken", so when date night rolled around a few weeks ago I knew exactly what we needed to try!

I decided to sub the mayo for greek yogurt for a low-cal, healthier spin. This recipe was so extremely easy, convenient, and absolutely delicious. The greek yogurt locks in the moisture, and the spices just kick it up to a whole different level.

We were both huge fans... in fact I've made it two more times since then because it was so yummy! Paired with crunchy baked okra and roasted garlic brussel sprouts... oh yum! Super low in calories and high in protein, both your waistline and your hunky meat-and-potatoes kind of man will thank you!


{ Skinny Greek Yogurt Chicken }



Ingredients:

4 boneless/skinless chicken breasts
1 cup plain greek yogurt (Chobani 0%)
1/2 cup parmesan cheese - grated
1 teaspoon garlic powder
1 1/2 teaspoon seasoned salt
1/2 teaspoon pepper



Directions:


1) Preheat oven to 375 degrees.

2) Combine greek yogurt, parmesan cheese, garlic powder, seasoned salt, and pepper in a bowl.

3) Line baking sheet with foil and spray lightly with cooking spray.

4) Coat each chicken breast in greek yogurt mixture and place on foiled baking sheet.

5) Bake for 45 minutes.

6) If you would like to brown the top, turn the broiler on high for 3 minutes or so. Remove from oven once top is golden brown.

Yes, I told you, the world's easiest meal, and clean-up is even easier!

For all of us working women, this would be extremely easy to prep the night before. Then all you have to do at the end of a long day is preheat the oven and throw the chicken in! Voila - a healthy meal in less than an hour!

I promise you will love it. In fact, this leftover hater looked forward to lunch the next day - shocking!

Stellar Weekend in Photos

Let me just start off by saying... this weekend was pretty spectacular.
Now that we've set the bar of awesomeness for this post, let me share some weekend fun and photos! It all started with a very mellow, rainy evening in on Friday night.

It had been a long week full of traveling for work (as you could tell by my lack of posts), so I gladly welcomed a night in snuggled up with BF and Bella Beast

Adam and I ordered pizza and watched Iron Man. I am currently being educated by my Marvel movie loving boyfriend. I still have 2 movies to watch before we go see The Avengers next week. Nerdy? You betcha.

On Saturday, we spent the late morning/afternoon shopping and lunching together! We went to our beloved Nordstrom Rack (Do you have one? Are you addicted to the AMAZING bargains like me?) to find him some nice slacks and a new tie for a wedding that evening. What we have learned is...



+ we have completely different tastes in menswear
+ I like simple, sleek, and GQ
+ he likes busy, cool, and fun


...until we found this little beauty and happily agreed in an instant:

After watching and rewatching a "How to Tie a Bow tie" Youtube video for 20 minutes, bud finally figured it out. Success!

Once we arrived at our good church friends' wedding (bride is from my Bible study and groom is from Adam's), he received no fewer than 12 comments on his fancy purchase. There may be a wide variety of bow tie purchased in the near future.

We had a blast hanging out with all of our friends at the wedding! The ceremony was heartfelt, food was excellent, and dancing was ridiculously fun. Love my small group!

By the time we left the reception and Adam dropped me off at my place, I was high heel-less and completely exhausted. But boy, did I sleep well! Good times had by all.

I woke up to the relaxing sound of rain and thunderstorms outside. I met a good friend for coffee and window browsing later in the afternoon, which was lovely.

The blustery day continued, so we decided to forgo evening church, as Adam cooked an amazing dinner for me and his roommates - I think I'll hold onto him! - as we watched Captain America (my fave so far). Two more movies to go!!

Needless to say, I didn't want the relaxing, fun weekend to end so quickly! These next 3 weekends will be super busy with two out of town weddings that we're in, and my little sister's high school graduation, so it was nice to enjoy being home!!

I was just glancing at the calendar this morning and could hardly believe my eyes when I saw May! Where has this year gone? Sometimes I feel like the older I get, the days just run together. Are you in the same boat?

Well, I hope your weekend was wonderful and everything you needed it to be. Friday evening was extremely relaxing with delivery pizza and a movie. On Saturday, Adam and I spent the day together shopping for new sleek suits for him and enjoying lunch al fresco on the Houlihans patio.

Saturday night was filled with a fun wedding of our dear chruch friends, and Sunday was a lovely, relxaing, rainy day! Weekend photos and recap coming tomorrow!

Confessional Friday

I know that I've been completely MIA these last 2 weeks - I'm so sorry! With my busy work travel schedule, it's been hard to keep up with the blog, but I promise to do better!! So thankful that it's Friday and the beginning of a great weekend!!

1) I'm a complete sap.
I'm sure you all have come to find this is true, but I love all things mushy gushy. Even after dating Adam for years now, there are still sweet things he does that make my heart melt. This morning's sappy moment? A sweet song on youtube sent via gchat.

So I sent this one back... love it. And love him.





2) I have done over 4 loads of laundry in the last 2 weeks. None of them from start to finish. In fact, I have a whole load of CLEAN clothes laying on my laundry room floor unfolded. I'm going to be a terrible housewife someday. True story.


3) So yesterday, Bella Beast and I were almost run over crossing the intersection on our run. We were about 1-2 yards from the other side when this idiot in a car turning right decided to scare us by stopping, then suddenly leaping forward 6 inches from me and my dog. If that wasn't enough (keep in mind we had the pedestrian walk light), he then had the audacity to honk the horn at me.

Well you better believe I slammed both hands on the hood of his car and then pointed my finger straight at him while yelling. Probably not my most self controlled moment, but by golly he sure deserved a smack across the face for trying to run over my little dog!


4) I am incapable of putting mascara on in the morning without getting it all over my face. I'm completely serious. Every time I put it on, I go back with a q-tip to remove the excess goop. I need a mascara how-to class. Or at least invest some time in watching mascara application youtube videos. *sigh*


5) As previously mentioned, I've been a terribly sub par blogger as of late. BUT that's all about to change! This weekend, I vow to take photos so that I can share the weekend fun! I'm also scheduling some blog posts (via the new fancy blogger settings)! That way, even when I'm out of town, I can post on the fly! How are you guys liking the new Blogger template?

Confessional Friday

My goodness, Friday, I've been dying to see you since, well, Monday. Needless to say it's been a long week. When my alarm went off this morning I could've sworn it was Saturday, but alas it was not.

Anyway, I have big plans for the weekend that include roadtripping to Wichita w/ BF to see the fam, his fam, and our good friends! Should be busy and fun-filled, but I hope to get back at a decent time on Sunday to recover and relax!

1) I think I've finally broken the sugar addiction. Or at least made progress. I gave up all added sugars for lent, allowing me to just have a few treats over Adam's b-day, and it's been touch-and-go there for a little bit.

For those that know me, I have the biggest sweet tooth. The amount of "treats" I enjoyed per week wasn't normal. Well, I have to say the yucky bloated, tummy hurting side-effects of eating sugar after not having it in a while was enough to keep me going! I like this new energy I've found, and even after Easter, I may limit it to 1-2 treats per week. Woah.

2) Cannot stop listening to this song. I heard it on the radio Tuesday, and it's been on repeat ever since. Why does it have to be so gosh darn catchy?! Guilty pleasure indeed.





3) I am ridiculously excited to be home this weekend. There's something about being around my family, sleeping in my old bed, and relaxing on the patio that feels oh-so-good! Come on 5 p.m.!!


4) I've been tossing around the idea of taking a random weekday off soon. I just feel a little frazzled and overwhelmed at work sometimes, and it would be nice to take a random Wednesday, get stuff done, and have some me time. Do you do this?


5) I feel like I've lost all sense of time. It's almost April? What is today? WHEN is Easter? Wasn't it just Christmas yesterday? I feel old.


6) Before I confess this one, let me just add a little disclaimer that I love my friends dearly... BUT some of these high-maintenance, bridezilla weddings need to end soon. I am honored to be in several weddings this spring/summer and a bunch of them are extremely fun to be a part of. It's just the random, dramatically stressed out bride/groom that I can't handle.

Smile. Relax. At the end of the day you're getting married. Who cares if the linens aren't the exact color of the bridesmaids dresses. Nobody will notice... promise.

This whole thing has me DREADING wedding planning one day. I am either eloping (did you hear that, Dad?!) or making my own wedding low key, fun to be a part of, and a joyous celebration (as it should be). There will be no craziness.

Today's Snapshot

One more day, folks! Just one more day!
I couldn't be more ready for a nice weekend in Wichita this weekend with Adam and my family. Should be filled with many of our favorite people!

In other news, I really enjoyed answering all of your questions yesterday and could relate to many of your wonderful comments - love you all! If you missed it, check it out here... so questions made me blush! :)

On to today...


{ Here's a little snapshot... }






{ Weather }
It's been completely gorgeous this week, but today the rain has set in. You won't find me complaining though, rainy day are my absolute fave!


{ Drinking }
Coffee. I am notorious for getting a hot cup of joe in the morning and sipping on it all day - I love it cold! My mom thinks that's totally gross, but I love it.


{ Listening }
Florence + the Machine. Cannot. Get. Enough.


{ Eating }
Lunch!! I'm starving already. Turkey and hummus sandwich on whole grain bread, sunchips, apple. Yummm.


{ Wearing }
Well lately the office has been freezing, even though it's in the 70s outside. So, I'm wearing my favorite dark wash skinny jeans from The Limited and my lightweight boyfriend sweater from the GAP (surpirise, surprise...). Love those stores!


{ Feeling }
Sleepy! We did a sushi bday dinner for our dear friend, Sean, last night, then saw 21 Jump Street (which was completely hilarious!!). I got home at 11:30 p.m. and crashed. Let me just say that the 7 a.m. alarm was ride awakening this morning.


{ Wanting }
I would love to have a little extra shopping money! So many cute dresses, skirts, flowy spring tops, swimsuits, and jewelry that I'm in love with. BUT, alas, I am not allowed. I have put myself on a spend free diet until all the weddings die down in the next 2 months. *sigh*


{ Needing }
I'm in desperate need of some new running shoes! My life was changed last year when I went to the custom running shoe store, where they watch you run, check out your old shoes to see where they wore down, and recommend the perfect shoe.

I felt like I was running on fluffy clouds after I bought new shoes last year, but with all the miles I've put on them... I'm well overdue for shoes that aren't broken down!


{ Thinking }
I can't wait for date night tonight! I'm heading to Zumba for a good workout, then Adam and I are going to make breakfast for dinner... brioche french toast, eggs, fruit, and bacon from the fresh farmer's market downtown. Yumm. Looking forward to snuggling and being lazy after dinner, maybe some board games will show up!? :)


{ Enjoying }
I love quiet days in the office. Not too many people here, my phone isn't ringing off the hook, and minimal e-mails. It feels good to be able to breathe and get things down in a more laid back atmosphere. Love it.

Meg: The Open Book

Happy Wednesday!!
Only 2 days to go until the weekend returns. I mean why can't we work 2 days and have a 5 day weekend... i think this system is slightly backwards if you ask me.

Anyway, thanks to those of you who played along and asked me questions yesterday on my Riddle Me This post. They were all really great questions - some serious, some made me giggle, and others made me blush.

So as promised, here are your answers...



1) Which trip would you pick (all expenses paid): Disneyworld (in another country) or an island (like the Maldives)?- The Vox

Ooohh! You're just trying to make it tough on me, aren't you? Well as many of you know, I am a huge Disney fan. I would love to one day in the future enjoy the lovely Disney land with my spouse and be little kids again!

BUT, that being said, if I had to choose, and it was all expenses paid, I would hands down say take me to an island! Any secluded, relaxing, romantic, outdoorsy, fun place! As long as there are pina coladas and surf, I'll be golden! UNLESS you can let me choose Disneyland and then and island to recover from the fun?


2)Whats one thing you've written about on your blog that you've debated whether or not you should post? Were you glad you did? - Sar

This one makes me think back a ways! I would have to say that I am highly uncomfortable in confrontational or emotional situations. Like nervous as can be. So whenever I post anything remotely political, personal, controversial, that makes me nervous as to what comments I will get or if I shared too much. A few examples of these posts include...

3) How do you stay inspired to write (and not just post pictures of your breakfast every other day)? - Megan

Excellent question! Here's my theory: Some days you're inspired, some days your not. I try not to post unless I am inspired by something. I have both a notebook and an app on my phone where I write down things I'm excited about, want to share, fun ideas, etc.

I try to keep my eyes and heart open to what moves me, and then choose to share those things. Not every post will have a million comments, and not every reader can relate, but as long as I stay true to myself, I count that as a win.


4) How did you and Adam meet? - Amber

I was 22 years old living in Oklahoma City, and he was 25 living in Kansas City. I was planning to make a trip to Wichita, KS where my family lives for a family celebration, when my best friend Courtney called.

Both Courtney and her then-boyfriend (now husband), Matt, wanted to get together while I was in town. They mentioned Matt's cousin would also be int own that weekend and I didn't think anything of it... until the "Adam's such a nice guy!" talk began. Then I knew it was their sneaky mission to set us up.

I was absolutely against the idea of a double date, and said let's just grab all of our friends and hang out together. No pressure, no weird moments, just a mellow evening getting drinks or something.

So on August 22, 2009, we were all meeting at Granite City that night, and I was the last one to arrive (due to the family party going late). I was determined to be stubborn and not cave into their creepy matchmaking... and then I met Adam.

As soon as I shook his hand and looked into those big brown eyes, I was weak in the knees. We talked about our favorite beers and college sports (and that's how you get 'em, ladies! haha).

We all went back to my parents' house to sit around the bonfire were we discovered our mutual love for "(500) Days of Summer", and toward the end of the night, I conveniently added that I would be in Kansas City a month later for a wedding with the whole gang.

We talked in some form - e-mail/txt/FB/phone every day since that day. And on October 1, 2009 we officially became BF and GF. And then a month later I found out I got my dream job in Kansas City that I had applied to before I met Adam... and lived in his parents basement for a few weeks (but that's a whole 'nother story!).


5) Its been 2 1/2 years - when is Adam going to pop the question? : ) - Emily

And what a great follow-up question that made me both giggle nervously and blush. Excellent work, Emily!

This is how I see things... I am 25-years-old, extremely independents, have found my one and only, and am in no big rush to get married. I am a firm believer that every single couple is different and there isn't one way to do things.

We have friends that dated for 3 months and were married by 6, which is great for them, but (obviously not for us). I am forever thankful for these beautiful years where Adam had allowed me to get to know him inside and out.

We have gone through great triumphs, deaths, medical scares, situational changes, emotional seasons, diagnoses, hard days, joyous occasions, and more hand in hand.

Through these life moments, I've learned so much about how he is so supportive, quick to forgive, unconditionally loving (even when I don't deserve it), fun and patient, and I couldn't have asked for a more perfect other half for me.

So this being said, I can't imagine anyone but Adam to grow old and gray with. It could honestly happen tomorrow for all I know, or 7 months from now. All I know, is that I will always love that man for exactly who he is, and I would wait years if I had to in order to spend my life by his side.

So for now, I enjoy the moment and live in the present! :)


6) What is your favorite part about your home town/ what is a must see? - Seri

Oh my, now you have stumped me - haha! I grew up in Wichita, KS, where it's what I like to call a small big city. We still had great opportunities, good schools, pretty neighborhoods, culture, and much more, but with a very homey down-to-earth feeling.

My favorite things to do or see in Wichita? I absolutely love the Bradley Fair outdoor shopping/entertainment area. My favorite restaurant, Bella Luna is there, sissy has worked at the Cocoa Dolce chocolate shop, and Adam and I walked around the Bradley Fair pond holding hands on our first date.

Other than that, I'll really have to think! My favorite things are my parent's porch/firepit, large walking trails, you can get anywhere in 15 minutes, and I still have many dear friends and family that live there. It's a nice place to visit, but I love living in a large city with a change of scenery now! Wichita will always feel like home though! :)
