The Perfect Summer Treat: Blueberry Crumb Pie

Last Saturday morning, my parents drove out to The Berry Patch to handpick pounds of juicy plump blueberries. They called me to let me know they had a little treat to drop by, and brought over a huge bag of berries that were bigger than grapes and so sweet. We couldn't stop popping berry after berry into our mouths - they were so ripe and sweeter than sugar.

We decided to invite over some company for dinner that night, so when I was scrambling to make a nice dessert full of summer flavor, I knew those blueberries were my perfect inspiration.

I whipped together this delicious pie in no time (seriously, it was so easy peasy), and I knew by sighs and the taste bud inspired groans that this was a home run. The melt-in-your-mouth crumb topping perfectly enhances the fresh berries. A must try this summer!

{ Blueberry Crumb Pie }

Ingredients:

- pie crust shell (I love this recipe)
- 3/4 cup sugar
- 1/3 cup flour
- 21/2 teaspoons grated lemon zest
- 1 tablespoon fresh lemon juice
- 5 cups fresh blueberries
- 2/3 cup packed dark brown sugar
- 1/2 cup rolled oats
- 1/2 cup flour
- 1 1/2 tablespoons cinnamon
- 6 tablespoons butter

Directions:

1) Preheat the oven to 375 degrees.

2) Lay prepared pie crust shell over a 9 inch pie pan, and gently press dough into the bottom and sides until it is formed to the plate.

3) In a large bowl, stir together the sugar and flour until combined. Slowly stir in the grated lemon zest and lemon juice. Once blended, gently stir in the blueberries until they are coated in flour mixture. Pour into the pie crust.

4) In another bowl, whisk together the brown sugar, oats, flour and cinnamon. Next, cut better into small pea sized pieces and mix in with forks or hands until mixture is crumbly. Lightly sprinkle the crumb topping evenly over the pie filling until top is covered.

5) Place the pie in the middle of the oven and bake for 40 minutes, or until crumb topping is lightly toasted and golden. Remove the pie and place it on top of a wire rack to allow to cool. Serve pie warm and top with vanilla bean ice cream and a sprinkle of cinnamon.

Once this pie was in the oven the whole house was filled with scents of cinnamon and fresh, plump blueberries. Our mouths were watering, and I could barely keep my husband from picking at the pie before it cooled. 

A nice warm piece of blueberry magic with a little scoop of ice cream on top will make those summer nights even sweeter. You have to give it a shot, you can thank me later! ;)

thinking | That meeting besties for coffee + daydreaming before work is the shiz.
making | Cute patterned eye pillows full of rice and lavender for my coworkers to enjoy at our weekly yoga class. Namaste.
drinking | Quay spice latte with extra fancy latte art or green smoothies like they are going out of style.
reading | "Beautiful Ruins" by Jess Walter, but just finished "The Fault in Our Stars".
wanting |  Absolutely every piece of Americana inspired gear from this post.

The Essentials: Americana Swag

The 4th of July holiday is just a week away, and I couldn't be more antsy to get out to the cabin to celebrate with the fam! Every year we have a huge patriotic blow out and party the day away.

Family Olympics, kayaking, a cookout, fireworks over the pond, star gazing... you name it!

So of course, everyone is always out to one up each other by introducing their latest Americana swag. Little do they know, I've made a few purchases that I'm excited to debut! :)  Here are some awesome finds I came across. I think you will love them too!

The Best Movie I've Seen in Years

Run, don't walk to your nearest movie theater...
Chef is just that good.

Last Sunday we celebrated Father's Day by treating my pops to breakfast at Beer Kitchen in Westport. We were hoping for some pool time or a little putt-putt action, but the rainy weather stood in our way. The next thought was family movie time, so when we were cruising through options, I remembered seeing a trailer for Chef that I thought looked incredible. 

Before I knew it, and much to my surprise, the fam was on board with hardly any coaxing!



So, we found ourselves in plush reclining movie seats with butter spritzed popcorn in tow, and the movie started to roll. At first I didn't really know what to expect. 

I knew just from the trailer that I would just fall head over feet for the beautiful food styling, but within 5 minutes flat I was ready to give up my career, purchase a janky food truck, and get cooking.

Yet, aside from my own personal love affair with all things food, the movie was so powerful. Such an inspiring message, a heartwarming yet edgy story, and had me rolling wih laughter. And the thing I found most ironic? The storyline revolved around the incredible evolving relationship with a dad and his kid. It's so sweet and funny.

Now, I couldn't have planned a better Father's Day outing if I tried.




Oh, just a fair warning, the food you see in that movie will absolutely get your stomach grumbling for just one bite. There is a scene in the movie where he makes the most delicious, ooey gooey gourmet grilled cheese...

...guess who dropped a solid $30+ on fancy cheese and fresh sourdough that night?
Yep. It looked that good.

Hands down the best movie I've seen in 2+ years, and I'm already to antsy to experience it again.

Mingle Monday Link-Up + World Cup Spirit

I sure hope you have your red, white, and blue on today...

It's time to cheer on Team USA in their first World Cup opener! In case you had any doubts, let me reassure you that we will be celebrating tonight at our World Cup party. I started playing soccer from a very young age through high school, and have been a part of a crazy soccer family. So needless to say, the world cup is like Christmas morning.

The Haskins House will be full of friends and I've got my light-up America fedora ready to go (it was a total gem during the Olympics! Haha!). We're so proud that our local KC Sporting soccer team has two players starting on the World Cup team (Go Zusi and Besler!), so it will be extra fun.

Anyway, it was a spectacular weekend and I will have to recap you on le blog this week! Lots of crazy things coming your way, so I hope you stay tuned!

Gratitude Lately + Weekend Outlook

Happy Friday, you crazy kids!
In case the day, alone, wasn't enough to put a spring in my step, my awesome boss surprised me with my favorite hipster coffee. What a blessing to feel known and well appreciated.

Have I mentioned that I love my job?
Oh yeah... only every day.

Anyway, the weather has been absolutely breathtaking, my hubby is home from work trips, and I have so much to be thankful for.

Grateful for colorful sunsets while cruising through the Flint Hills, and for our shared
love for Frankie Valli.



For getting the VIP treatment (yay free tickets!) with the 
world's coolest parents.




For rainy mornings spent at my favorite coffee shop, and bestie chat that lifts my spirit more than 
a brand new puppy or Christmas morning,



For being blessed with a surprise dose of encouragement on days when I need it most.



For 20+ years of friendship through all of life's valleys and mountain tops, and stories that 
make me laugh so hard my belly aches.



For hotties in white button down shirts that win golf contests like a boss.



For great mail days in small packages that make being a blogger so much fun.



For bravery that pushes me out of my comfort zone, and for new blog friends that are sweeter 
than Murray's ice cream on a hot summer day.

Top 10 Summer Reads

Follow my blog with Bloglovin I wish I could say that I'm an obsessive book worm who plows through libraries of books with ease. I mean, I could even settle for having a good conversation about what I am reading lately.

Wait, you mean talking about the fact that I can easily watch 4 episodes of book-turned-series Orange is the New Black isn't an acceptable alternative to actually reading the series?

Well, this summer, I am out to turn things around. It's time for me to reignite my passion for getting completely lost in a good book while lounging outside on our porch. Or perhaps to decide that picking up a good read over catching up on my DVR is way more worthwhile.

So I have made a fantastic list of books that excite me, and believe it or not, I'm half way through the first book! Well on my way, my friends, well on my way.



My Summer Reading List

1// The Fault in Our Stars by John Green 
- This is insanely good so far, although it does hit a little close to home given the fact that I work with cancer patients every single day. Excited to finish and then see the newly released movie!


2// The Hundred Foot Journey by Robert Morais
- I've been dying to read this culture and food filled read. Not to mention the upcoming film looks fantastic!


3// Beautiful Ruins by Jess Walter 
Want to hear a secret? I was drawn o the book by it's cover (ha!), but once finding out that it's set in a gorgeous Italian town with lots of rumors and mystery, it easily jumped on my ever-growing list.


4// Gone Girl by Gillian Flynn 
People won't stop buzzing with excitement about this book, so naturally I need to do some snooping.


5// Where'd You Go Bernadette by Maria Semple
Another read I keep seeing everywhere. What a cleverly interesting cover and I can't wait to dive into the mystery.


6// Bread and Wine by Shauna Niequist (thanks for the recommendation, Rach!)
The celebration of serving good food and doing life by loving others one meal at a time.


7// Wild by Cheryl Strayed 
The adventurist side of me is completely intrigued by this story. A completely independent woman off to find new adventure while hiking her way through the Pacific Crest Trail.


8// Homeward Bound by Emily Matchar 
This book was simply written to feed my soul. An inside look at why modern day women are thriving on going back generations to learn the art of canning, sewing, knitting, baking, gardening, and so much more. A glimpse inside the ambitions I love to daydream about.


9// Driving Lessons by Zoe Fishman 
The story just seems like a good one about three women each at a crossroads in their life and how they deal with everything that comes along with that.


10// The One and Only by Emily Giffen
Let's be clear here, I am obsessed with anything and everything Emily Giffen has ever written. So low and behold, the moment she released a new book (I've been waiting forever!), it went on the list.

Ever since I was a little girl, I lived for sweet summertime. I remember that when I was 8-years-old I used to keep a countdown of days until summer in my Precious Moments diary, and on that sweet day when school finally let out, I felt completely free. What can I say, I'm just a summer girl.

There was always so much mischief to get into, wild adventures to be had, and new things to try. Twenty years later, I am still that same blonde haired, barefoot, hippie child craving some time outdoors soaking up the sunshine.


So, I let my love for the season take over, and I created my little personal bucket list so that I can soak in all the sunny months have to offer...

+ finally visit the zoo (instead of watching the Penguin Cam daily...)
