Summer + Weekend = Happiness

Yesterday was the first official day of summer... {ahhhh!!}
...and I couldn't be more excited [obviously]!! Summer is one of my favorite seasons (right behind fall) and their are so many reasons why!

Time to break out the straw fedoras, breezy racerback tanks, strapless sundresses, and cute sandals! I have SO many yummy things that I want to make just waiting for me to try them out on my Pinterest boards! I am craving tons of refreshing fruit, grilled lean meat, and in season veggies.

It's so much easier to eat clean and stay healthy in the summertime, don't you think?! With all of the in season foods and outdoorsy activities? My goodness, I love summer.

Saturday morning Zumba, lounging by the pool while reading my new book, theater in the park with friends (Legally Blonde the musical!), church on Sunday, probably more pool time, and then catching up on some baking and DVR time! And perhaps I may finally take myself to see this incredible documnetary?!

So tell me about your weekend - how was it? Did anyone get to celebrate with or honor their dads? I had a blast with my Mom and Dad in Kansas City this weekend!

Yesterday, I made Dad this spectacular Blackened Chicken w/ Cilantro Lime Quinoa recipe (which they RAVED about - try it ASAP!), as well as this Rustic Peach Pie (uh-mazing!) topped with vanilla bean ice cream.

I'm a little cooking machine, and subsequently my Dad's favorite child (eh, Linds and Kelly?!).

Confessional Friday

Hey there gal pals! Happy Friday to you!
For the first time in a long time, the week sure flew by for me. And with my fabulous parentals driving up to Kansas City for a visit, I couldn't be more excited that the weekend!

3) I confess that... I have not washed my face before bed this entire week. Now before you get totally grossed out, know that I am completely obsessed with the Neutrogena Deep Clean Face Wipes. Although I shouldn't avoid washing my face every single night, it's nice to have a back-up when I am tired (aka: ridiculously lazy).

4) I confess that... I am secretly loving my doctor putting me on couch arrest. I've been increasing mileage on my daily runs and have now developed hip and knee bursitis in my IT band. Don't worry, I know it sounds no fun (and it is kind of ouchy!), but nothing good ol' ice packs, rest, pain meds, and my overflowing DVR can't fix! ;)


5) I confess that... I can't wait to visit the farmer's market with my mom on Saturday morning, buy lots of peaches, and make my dad these rustic mini peach pies for Father's Day. Best child award? I think so.

Getaway Weekend In Photos

Well it's been almost a week since my little getaway weekend... it's about time I get my act together and share our little adventure with you!

For those who missed last week's post, Adam and I went on a little roadtrip down to the cabin his family owns and met up with some of our favorite in-town friends! Unfortunately... after looking at the photos, I realized I didn't get any of Matt and Ashley (sorry friends!), so we look a little self-absorbed...

Oh. And I also forgot to take a photo of the actual cabin (it's gorgeous!), but don't you worry your pretty little head... we're headed back down with Adam's family and our friends for the 4th. I will get photos then! Deal?


{ The Trip }


So we left pretty late after work on Friday night and it takes quite some time to get there. Needless to say we got in super late and crashed. BUT here are some before photos...

Doesn't Bella Beast look excited for cabin weekend?




Naturally, I woke up freakishly early (for a weekend) because I was so excited to venture into town! We decided on visiting Carolyn's Essenhaus for breakfast in Arlington. Arlington is a small town that has a decently sized Amish Mennonite population, and they make everything from scratch!

I enjoyed a tasty plate of biscuits and gravy, and then we ordered one of Carolyn's famous homemade pies to go. Why, oh why, did I not get a picture?! 4th of July weekend... there will be more pie!

Anywho... we drove about 15 minutes into Hutchison where we stopped by two of my favorite stores. We never make a cabin trip without stopping at Apron Strings (adorable kitchen store) and Smith's Market (known for quirky toys, tons of candy, fresh produce, and tasty trail mixes).




Now remember when I mentioned the candy section?

Well this picture doesn't do it justice! They have every flavor of licorice, type of candy from your childhood, and yummy homemade candies too! YUM!




...I found these and thought they were hilarious. I mean there is a pig shaped gummy?!

I probably laughed for 10 minutes, while Adam quickly walked to another section and pretended he didn't know the crazy lady cackling over the farm animal gummies.



After these few pit stops, the four of us went to a tasty local Mexican restaurant that had incredible enchiladas... my love language. El Patrillo must have really loved me, because I demolished my entire plate. Such a fun double date!

Lunch wrapped up, so we grabbed some groceries to cook dinner first, and then drove back to the cabin. It was the perfect day to sit on the dock, dangle your feet in the pond, get some quality vitamin D, and sip adult bevvies.

Since it was well into the 90s, we didn't last terribly long. Don't worry, the fun continued by way of naps and board games. Such great company!! Later that night, we enjoyed a tasty dinner and the Disney movie Cars. :) Yup, you read that right.

That next morning, we thought it would be super fun to cook up a late brunch and sit on the screened in patio before heading back to KC. What a nice little date just sipping coffee and just being us. Doesn't the spread look delish?






Yup, so there you have it! It was a great weekend with my favorite buddy! We had a blast spending time with our dear friends and loved being outside at the cabin!

Countdown 'til 4th of July weekend... t-minus 2 weeks!

Ummm... Ouch!

You could call this an I-need-massive-amounts-of-sympathy post...
and you'd probably be right. I'm in so much pain today! Most of you know my story about living with Fibromyalgia, so I just assumed my recent outer hip pain these last few weeks was just a combo of FM symptoms plus over doing it on my workouts...

...until I almost died this morning.

Slightly over dramatic? Okay, okay, you're right.

Adam arrived at my house at 6:15 a.m. for another morning run before work. My hip has felt strained and achy for over two weeks now, but I thought stretching and resting would do it's trick.

Well, I could barely finish 2 miles (which we typically run without a hitch)... I was in so much pain! I am waddling around everywhere with a very scary grimacing expression, it hurts to even lightly touch, and boy howdy do I just want to soak in a hot tub or something.




I've since come to the conclusion that I should probably rest my injury by purchasing and riding around on a shiny new yellow vespa scooter...

...or at least head to the doctor this afternoon for some xrays/MRI/cortisone shot in the hip. Boo! Praying for good guidance from my trusty doc and minimal pain!

Meanwhile, if anyone would like to make me feel better...

I am back from a fantastically relaxing weekend, but this girl is sleepy today! Between the thunderstorms and a scary dream keeping me up last night, I could use about 4 cups of coffee or one epic nap today! Oh my lanta... *yawn*

BUT I did have a wonderful weekend - photos and a recap coming soon! I had a blast getting away for the weekend, meeting up with our friends, watching movies, taking naps, having great company, spending time on the dock, cooking breakfast, and enjoying time with Adam!

So very thankful for a weekend to un-plug from reality, catch up on sleep, and just remember how to relax.

Let's Get Lost...

Adventure and a relaxing weekend await...
I am counting down the seconds until I bust out of the lobby doors of our historic downtown office building and hit the road. What awaits? A fabulous weekend getting to spend time with my love as we enjoy time at his family's cabin.

The cabin is easy to fall in love with and is one of our favorite places on earth! We love family cookouts for the 4th of July, winter getaways, and disconnecting from life for a little bit.

Lately, I just feel burnt out. Exhausted. In desperate need of an adventure.




I want nothing more than to be in the car, driving off into the sunset, with my hand in his. Great music playing. Tasty snacks to share. Stories to tell. Is it 5 o'clock yet?

Not to mention, that man is one hilarious human being to spend
3.5 hours in the car with...

...and he's not bad to look at either. ;)




So you're wondering what's on this glorious weekend agenda?
I'm so glad you asked... 


 + board games
+ late night movies
 { I'm hoping for Monster's Inc. - we both love it. }
+ star gazing
+ dinner on the patio
+ long walks around the pond

Chicken Pine Nut Pesto Pasta

Have you ever found yourself in one of those tormenting cooking ruts. Not sure what to cook for dinner? Tired of the same old recipes on rotation? Well, I have the world's fastest and tastiest recipes for you to try!

I am not sure why it has taken me a bazillion trillion years to post one of my most beloved and frequently used recipes...

...but today's the day!

Let me preface this recipe by giving you a scope of how much this recipe is adored. Whenever I ask Mr. Adam what I should make for a dinner date night, chicken pesto is always his answer. Always. Every single time.

I've made this for dinner parties, passed the super easy recipe on to family and friends, and it's always universally loved.

I have a sneaking suspicion that it's because this is a hearty bowl of delicious comfort food, and it's ready in less than 30 minutes. You can't beat a relatively hands off recipe that's sure to please, right?

I hope you give it a try... and let me just tell you, next day leftovers are to die for (and I'm not a leftover kind of gal!).

{ Chicken Pine Nut Pesto Pasta }




Ingredients:

- 1 container Buitoni Pesto Sauce
- 1/2 box of whole wheat thin spaghetti
- 1/4 cup freshly grated Parmesan cheese
- 1/4 cup pine nuts
- salt and pepper to taste
- 2 boneless skinless chicken breasts
- Kraft Caesar Vinaigrette with Parmesan Marinade (or marinade of choice)

Directions:

 1) Marinate chicken breast in the Kraft marinade so that chicken is coated in a bowl or Ziploc bag. I recommend 20-30 minutes, or you can prepare it in the morning for dinner in the evening.

2) Preheat oven to 350 degrees. Line baking sheet with foil that is sprayed lightly with olive oil cooking spray to prevent sticking. Bake chicken for 30 minutes.

3) Boil pasta following cooking directions on the package.

4) When ready, drain water from pasta. Add the container of pesto and the Parmesan cheese.

5) Once chicken is ready, cube it into small bites. Add chicken and pine nuts to the pasta and fold in gently. Salt and pepper pasta to taste... and voila!

Makes 2-3 servings.

** Speedy Tip **

In a hurry?
Feel free to buy a rotisserie chicken, carve out the chicken breasts from the whole chicken, remove skin and cube! This is an extra awesome way to make an 8-10 minute dinner when you're pressed for time!

A Must See

I have been dancing since the day my mom plopped me in dance class when I was 3 years old. I danced my way through high school as the captain of our dance team and absolutely loved spending hours on end choreographic and being goofy with my dance buddies.

So you can imagine my excitement when I heard about the First Position dance documentary.

For those of you who know me and have been reading my blog for a while, know that I am a huge documentary loving nerd! They could be about anything and I would be intrigued, but when it comes down to a dance documentary? It instanly goes into "must see" status.

So take a little glimpse and I dare you to tell me it doesn't look fantastic!!




Doesn't it look amazing? It was recently released to our fine arts theater here in KC, so I must find showtimes ASAP!

Mingle Monday Blog Hop!

Welcome back from the weekend!
How is everybody doing today? Good? Sleepy? Me too. It was such a wonderful weekend and I didn't want it to end so soon!

On Friday night, I spent time catching up with a dear work friend who just had a baby a few months ago - I've missed her! We played with Baby Sophia all night long and I can't get enough of that beautiful, chubby baby! She loves her Auntie Meg! :)

Saturday was one big long date day with my hunny - such a blast! Adam picked me up Saturday morning for a donut + coffee date (our favorite), followed by an early matinee showing of "Five Year Engagement". We grabbed some lunch, lounged around my house, and took naps (well, at least Adam did... I was distracted by somebody's loud snoozes.I kid! I kid!).

That evening we walked Bella Beast to the dog park and then took a long stroll around the park at sunset. We capped off our date day by trying a new restaurant and enjoying beers! Love that man.

Sunday was spent going to church in the morning, hanging out with my parents and sister at an amazing crepe restaurant, and then enjoying a relaxing pool party at Adam's parents house. I got to snuggle on the couch with my sister last night, and although I didn't get much sleep, we had a blast!
