World's BEST Pumpkin Bread

I have a lovely memory way back when I was in elementary school.

My brother and I would walk home from school and race down the street to see who could touch the front door first. The best days, were the ones when we were greeted by the smell of spicy pumpkin bread that had just come out of the oven.

I've tried every single pumpkin bread recipe I could get my hands on, but none of them live up to the recipe my mom has sworn by for decades.

Lucky for you, I have asked her to dust off her Women of Great Eats Junior League cookbook and share with you the best of the best. If you try any pumpkin bread recipe this fall, make it this one.
Your family will beg for you to make this deliciously moist, flavorful fall bread again and again... and that's a promise.


World's BEST Pumpkin Bread Recipe



Ingredients:

- 3.5 cups flour
- 1.5 teaspoons salt
- 2 teaspoons baking soda
- 3 cups sugar
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 can (16 oz) pumpkin
- 1 cup vegetable oil (sub unsweetened applesauce for lower fat)
- 2/3 cup water
- 4 eggs

Directions:

1) Preheat oven to 350 degrees. Grease mini loaf pans (5 x 3 x 2 inch).

2) Combine dry ingredients in a large mixing bowl until combined.

3) Add remaining ingredients and mix until well blended.

4) Place batter in prepared pans (approximately half full) and bake for 1 hour. 

- I recommend checking loaves around 45 minutes with a toothpick. When toothpick comes out clean, the loves are ready to be moved to a cooking rack

Why are you so much fun? If only there were 100 hours a day to do all my favorite fall things, like test every pumpkin bread recipe in the world. Good thing I have the world's BEST recipe to share tomorrow.


Dear Beastie Baby //
I love that you are wild and free, and love bows like your mama. I only wish they would stay on past the 21 minutes you've been home after the groomer, you little diva you.



Dear Work //
Thanks for providing me with the world's best co-worker friends. Breast cancer awareness month is always a busy one for us, but I'm so glad we're so much closer to finding cures and saving lives.



Dear Juju (aka: Mom) // 
You are one crazy cotton candy making tornado-of-a-lady, and I love you. Thanks for being so selfless and giving up your Saturday to make cancer patients (and me) smile.



Dear Sibs //
Wouldn't trade you for the world. Our uncanny ability to all show up in plaid unplanned is totally due to our weird sib telepathy. Rock on, you crazy kids.



Dear Grandpa //
You are officially the world's sassiest, most lovable old man. I had a wonderful time celebrating your 88th birthday this weekend and wish I could throw my arms around you every day. Cheers to memories, and wrinkles, and smiles.



Dear Hubster //
You, sir, make life fun. Thanks for spontaneously driving us the long way home from Lawrence just so we could soak in the sunset and the Kansas scenery. I'm glad you love ordering a pizza at 8pm and watching Breaking Bad in our new big kid bed. Love your whiskery face.

Hanging By A Thread

To be quite honest, I'm exhausted.

I am just spent in evey since of the word this week. Working over 60+ hours last week and traveling for a wedding last weekend completely did me in.

On top of it all, I have a huge event tomorrow that I feel like is all on my shoulders alone. Clinging to the promise of freedom that comes tomorrow afternoon at 5 p.m.!

Needless to say, I've been a little withdrawn and stressed this week, but I should be back to my regular blogging schedule next week, fully rested and back to my normally happy self.

Until then, this song takes sole ownership of helping me keep it together the last 2 weeks.
And let me tell you, I've been blasting it on volume 20 in the Jeep.

Every. Single. Morning.

Hello Cape Cod in Photos

If you saw the Boston trip in photos yesterday, this if a little inside view on our few days in the stunning Cape Cod area.

After a great few days seeing Beantown, the family and I piled in the car and drove out to Dennis, Massachusetts. As we drove along the tree lined streets, I just loved the quaint cottages and beautiful colonials that are sprinkled throughout the cape coast.

And then we arrived at our little VRBO (vacation rental by owner) cottage... beautiful.


Our new little pad for the weekend had such well done nautical themed decor, a huge back porch that you could see the ocean from and a gorgeous garden full of weird berries that I've never seen.

But of course they were so pretty with raindrops on them, so I had to get a photo!


The first morning I woke up at 5:45 a.m. because I was so excited to be at the beach. And then I realized everyone was still snoozing, so I listened to the raindrops while all cozy in bed. 

Eventually everyone rolled out of bed with crazy hair and jammies and we headed to see the beach. It was misty, quiet, and gorgeous.



Later in the day, I finally got to experience my first lobster roll... and I'm still dreaming about it. 

If you're ever visiting Cape Cod, be sure to stop by Sesuit Harbor Cafe for their world famous lobster roll! You order at the counter and then find a seat at the cute picnic tables right along the water. Great views, hilarious seagulls, and good eats. 


Before we went to dinner that evening, we thought we'd enjoy the gorgeous sunset at high tide with pumpkin beers and good company.

It was crazy to me that such a large beach was completely covered by water, so we had to sit on the cliff rocks, but the sunset was totally worth it.


My mother-in-law and father-in-law... adorable.


We found these super silly crab hats to take family photos in, and we were cracking each other up. It's not a normal Evans vacay without dorky hats! :)


Our cottage as the storm rolled in that evening.


After an evening full of great seafood at Scargo Cafe, we skipped over to Ice Cream Smuggler to taste the Food Network acclaimed ice cream sundae. So yum and worth every calorie.

We went back to the cottage for a game night in our PJs! The next morning we had breakfast and sat around sipping coffee and telling stories.


We finally got around to exploring the beach, chasing hermit crabs... and pretending we were crustaceans with claws we found on the beach. 

Meredith just cracks me up!


The boys probably could've played frisbee for hours, but who could blame them with the gorgeous views!


Later that afternoon, we roadtripped up to the craziest little coastal town... Providencetown!

People watching was fantastic! Meredith won for finding the world's sexiest cardigan (hello lighthouses!) and I enjoyed an ice cream cone that's bigger than my body. All in a day's work, folks!

Later that night we stopped at Winslow's Tavern in Wellfleet on our way back to the Dennis cottage. 

The crab cakes and oysters were delish, and we had a fun time trying to get hubs to open his eyes during a photo - haha. Love that guy.

The last morning we dawned our oversized cozy Cape Cod sweatshirts and set-out to say goodbye to the Atlantic. We watched Oliver (Meredith and Kyle's pup) chase seagulls and race down the beach. It was a beautiful last morning.
